Follow The Directions

01

Step
2 mins

In a large, heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat. (2 minutes)

02

Step
10 mins

Add bacon and cook, stirring occasionally, until crisp and golden brown. Remove bacon with a slotted spoon and set aside, reserving the rendered bacon fat in the pot. Crumble the bacon after it cools slightly. (7-10 minutes)

03

Step
5 mins

Add onion to the pot and cook in the bacon fat until softened and lightly caramelized, stirring occasionally. (5 minutes)

04

Step
2 mins

Stir in minced garlic and cook until fragrant, being careful not to burn it. (2 minutes)

05

Step
3 mins

Add collard greens, turnip greens, and mustard greens to the pot. Cook, stirring frequently, until the greens begin to wilt and reduce in volume. (2-3 minutes)

06

Step
1 mins

Pour in chicken broth, then season with salt, black pepper, and red pepper flakes. Bring to a simmer.

07

Step
45 mins

Reduce heat to low, cover the pot, and gently simmer until the greens are tender and have absorbed much of the broth. (45 minutes)

08

Step
1 mins

Stir in crumbled bacon just before serving.

For a vegetarian version, omit the bacon and use vegetable broth. Consider adding a smoked paprika to mimic the smoky flavor.
A splash of apple cider vinegar at the end brightens the flavor.
Adjust the amount of red pepper flakes to your preferred level of spiciness.
If you don't have all three types of greens, you can substitute with more of the ones you do have, or add other greens like kale or spinach.
