For a richer flavor, use a blend of sharp and extra-sharp cheddar cheese. If you prefer a milder flavor, remove the seeds and membranes from the jalapeños. For extra heat, leave some seeds in. Don't overbake, or the squares will be dry. They should be set but still slightly soft in the center. These squares are best served warm, but they can also be enjoyed at room temperature.
