Submerge the cedar plank in water (a large baking dish or sink works well) for at least 30 minutes, or up to 2 hours. This prevents the plank from catching fire on the grill. (30 minutes)

Preheat an outdoor grill to medium-high heat (around 375°F/190°C). Lightly oil the grill grate to prevent sticking. (5 minutes)

In a small bowl, whisk together the melted butter, lemon juice, herbes de Provence, dill weed, tarragon, smoked paprika, and minced garlic until well combined. Set aside. (5 minutes)

Remove the soaked cedar plank from the water and pat it dry with paper towels. Place the halibut steaks on the plank, leaving a little space between each. Season the halibut generously with sea salt and freshly ground black pepper. (5 minutes)

Spoon half of the herb butter mixture evenly over the halibut steaks. (2 minutes)

Carefully place the cedar plank with the halibut onto the preheated grill. Close the grill lid and cook for approximately 18-22 minutes, or until the fish is opaque and flakes easily with a fork. The cooking time will vary depending on the thickness of the halibut steaks and the heat of your grill. (20 minutes)

Open the grill and baste the halibut with the remaining herb butter mixture. Continue grilling for another 5-8 minutes, or until the fish is cooked through and the internal temperature reaches 130-135°F (54-57°C). (7 minutes)

Carefully remove the cedar plank from the grill. Let the halibut rest for a few minutes before serving.

For a richer flavor, brown the butter slightly before adding the other ingredients to the sauce.
If you don't have herbes de Provence, you can substitute with a mixture of dried thyme, rosemary, and savory.
Serve the cedar planked halibut with grilled vegetables, a fresh salad, or rice pilaf for a complete and elegant meal. Do not directly touch the plank once it is on the grill; use grilling gloves and tongs.
Consider adding a splash of white wine to the herb butter for extra depth of flavor.
