In a mixing bowl, combine the sliced beef with carne asada seasoning and garlic powder. Toss to coat evenly and let marinate for at least 5 minutes. (5 minutes)

Heat vegetable oil in a large, deep skillet over medium-high heat. Add the marinated beef and cook, stirring occasionally, until browned. (5-7 minutes)

Stir in the diced bell pepper, onion, and jalapeno pepper. Add the drained diced tomatoes and frozen potatoes. Cook until the potatoes are tender, stirring occasionally. Season with salt and pepper to taste. Transfer the mixture to a bowl and set aside. (8-10 minutes)

Melt 1 tablespoon of butter in the same skillet over medium heat. Add the whisked eggs and cook, stirring gently, until scrambled and set but still slightly moist. (3-5 minutes)

Return the beef and vegetable mixture to the skillet with the scrambled eggs. Cook and stir until everything is heated through. (2 minutes)

Melt the remaining 2 tablespoons of butter in a small dish in the microwave. (1 minute)

Divide the shredded cheese evenly among the tortillas, then top with the beef and vegetable mixture and scrambled eggs. Fold in the sides of each tortilla and roll up tightly.

Brush the outside of each burrito with melted butter. Place the burritos seam-side down in the skillet and cook until golden brown and crispy. Flip and brown the other side. Ensure the filling is heated through. (2-3 minutes per side)

For a spicier kick, leave the seeds in the jalapeno pepper or add a pinch of cayenne pepper to the beef marinade.
Feel free to customize the filling with your favorite ingredients, such as black beans, corn, or avocado.
To make ahead, prepare the filling and assemble the burritos. Wrap tightly in foil and refrigerate for up to 24 hours. When ready to serve, bake in a preheated oven at 350°F (175°C) until heated through and the tortillas are crispy.
Serve with your favorite salsa, sour cream, or guacamole.
