In a mixing bowl, gently toss the chopped apples with the lemon juice. (5 minutes)

Transfer half of the apple mixture into a slow cooker. Add the cinnamon candies, brown sugar, ginger, and cloves. Stir to combine. Pour in enough apple juice to almost cover the apples. (10 minutes)

Cook on Low, stirring occasionally to prevent scorching, until the cinnamon candies are completely dissolved. (Approximately 1 hour)

Increase the heat to High and continue cooking until the apples begin to soften and lose their shape. (Approximately 4 hours)

Stir in the remaining apples. Reduce the heat to Low and continue cooking until the apple butter reaches your desired thickness. The longer it cooks, the thicker it will become. (Minimum 3 hours)

For a smoother consistency, use an immersion blender to puree the apple butter after cooking.
If you prefer a more intense cinnamon flavor, add a cinnamon stick to the slow cooker during the cooking process.
Store the apple butter in airtight jars in the refrigerator for up to two weeks, or in the freezer for longer storage.
