In a large bowl, combine the butternut squash noodles with olive oil, sea salt, black pepper, and crushed red pepper flakes (if using). Toss thoroughly to ensure even coating. Distribute the noodles evenly between 2 large baking sheets. (5 minutes)

Roast in the preheated oven for 8 minutes. Then, carefully flip the noodles and roast for an additional 4 minutes, until tender and slightly caramelized. (12 minutes)

Transfer the roasted butternut squash noodles to a serving dish. Garnish generously with grated Parmesan cheese and fresh parsley. Serve immediately and enjoy! (2 minutes)

For a vegan option, substitute the Parmesan cheese with nutritional yeast or a vegan Parmesan alternative.
If you don't have a spiralizer, you can use a vegetable peeler to create wide ribbons or julienne the butternut squash.
Adjust the amount of red pepper flakes to control the level of spiciness. A pinch of cayenne pepper can also be used.
To enhance the flavor, consider adding a squeeze of fresh lemon juice or a drizzle of balsamic glaze after roasting.
