Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

In a food processor, combine three of the tomatoes, 1/2 cup olive oil, red wine vinegar, sugar, parsley, mint, basil, oregano, capers, and garlic. Process until smooth to create a fresh tomato sauce. Season with salt and black pepper to taste. Set aside. (10 minutes)

Chop the remaining tomato and set aside. (5 minutes)

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until softened and slightly golden, about 10 minutes. (10 minutes)

In a large baking pan, combine the sautéed onions, sliced potatoes, eggplant, zucchini, bell peppers, okra, the reserved chopped tomato, and the fresh tomato sauce. Stir to ensure all vegetables are coated. If needed, add a little water (1/4 cup at a time) so that the vegetables are almost covered with sauce. (5 minutes)

Cover the baking pan with a lid or aluminum foil and bake in the preheated oven for 45 minutes. Remove the lid/foil and continue baking for another 15 minutes, or until all vegetables are tender and the sauce has thickened slightly. (60 minutes)

Let stand for 10 minutes before serving (10 minutes)

For a richer flavor, use fire-roasted tomatoes in the sauce.
Feel free to add other vegetables like carrots, artichoke hearts, or green beans.
Serve hot, warm, or at room temperature with crusty bread for soaking up the delicious sauce.
Add a sprinkle of feta cheese before serving for extra flavor.
