In a large stockpot over medium-high heat, add the crumbled bacon. (2 minutes)

Add the potatoes, chicken broth, carrots, onion, parsley, celery seed, salt, and pepper. Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer, stirring occasionally and gently mashing some of the potatoes, until the potatoes are tender, about 20 minutes. Add more chicken broth if the soup becomes too thick.

In a separate bowl, whisk together the milk and flour until smooth and frothy. Slowly pour the milk mixture into the soup while constantly stirring. (3 minutes)

Bring the soup back to a simmer and cook until slightly thickened, about 3-5 minutes, stirring continuously.

Remove the soup from heat and stir in the American cheese until completely melted and smooth.

Ladle the soup into serving bowls and garnish with green onions and extra crumbled bacon.

For a richer flavor, use smoked bacon.
Feel free to add other vegetables such as celery, leeks, or corn.
For a thicker soup, mash more of the potatoes or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water).
If you don't have American cheese, cheddar, Monterey Jack, or Gruyere are all excellent substitutes.
Adjust the amount of salt and pepper to your preference.
