Fresh herbs can be substituted for dried herbs. Use about 1 tablespoon of fresh herbs for every 1 teaspoon of dried herbs.
The onion sauce can be made ahead of time and stored in the refrigerator until ready to use.
Feel free to experiment with different types of cheese in the waffle batter. Gruyere or cheddar would be delicious alternatives.
If you don't have whole wheat flour, you can use all all-purpose flour. The waffles will be slightly less dense.
