Follow The Directions

01

Step

Toast the Pine Nuts: In a dry skillet over medium-high heat, toast the pine nuts, stirring constantly, until golden brown and fragrant (approximately 2 minutes). Remove from skillet and set aside.

02

Step

Caramelize the Onion and Infuse with Garlic: Heat the olive oil in a large skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and caramelized (about 5-7 minutes). Add the minced garlic and cook until fragrant (about 1 minute).

03

Step

Sauté the Kale: Add the baby kale to the skillet in batches, stirring until each batch begins to wilt. Cover the skillet and cook until the kale is completely wilted and tender (approximately 3-4 minutes). Season generously with sea salt and freshly ground black pepper.

04

Step

Combine and Serve: Remove the skillet from the heat. Stir in the toasted pine nuts and golden raisins. Allow the flavors to meld briefly before serving (about 5 minutes).

For an extra layer of flavor, consider adding a splash of balsamic vinegar or a squeeze of fresh lemon juice at the end.
If you don't have pine nuts on hand, slivered almonds or chopped walnuts make excellent substitutes.
Baby spinach can indeed be substituted for the kale.
The kale can be gently washed to remove any dirt or grit.
