Lay out a sheet of Reynolds Wrap® Aluminum Foil, approximately 1 1/2 to 2 feet long, on a flat surface. Place the diced eggplant and garlic cloves in the center of the foil. Drizzle generously with olive oil. Carefully fold the foil to create a sealed packet, ensuring no steam can escape. (5 minutes)

For an extra smoky flavor, you can grill the eggplant directly over an open flame until charred, before dicing and proceeding with the recipe.
