Mix the Filling (7 minutes): In a medium bowl, combine the cooked brown rice, Parmesan cheese, goat cheese, toasted walnuts, 1 tablespoon of chopped fresh basil, and minced garlic. Mix well to ensure all ingredients are evenly distributed. In a separate small bowl, combine the Italian-seasoned bread crumbs with 1 tablespoon of olive oil. This will create a golden, crispy topping.

Stuff and Top the Tomatoes (5 minutes): Generously fill each tomato shell with the rice mixture, packing it gently. Sprinkle the bread crumb mixture evenly over the top of each stuffed tomato.

Air Fry to Perfection (15 minutes): Carefully place the stuffed tomatoes into the preheated air fryer basket, ensuring they are not overcrowded. Air fry for approximately 15 minutes, or until the tomatoes are tender, the filling is heated through, and the topping is a beautiful golden brown.

Garnish and Serve (1 minute): Remove the stuffed tomatoes from the air fryer and garnish with the remaining 1 tablespoon of fresh basil. Serve immediately and enjoy the symphony of flavors!

For an extra layer of flavor, try adding a pinch of red pepper flakes to the rice mixture.
If you don't have walnuts on hand, pine nuts or almonds make an excellent substitute.
Feel free to experiment with different types of cheese in the filling. Mozzarella or provolone would also work well.
