Step

In a large skillet or wok, heat over medium-high heat. Add the cubed Spam and cook until lightly browned and slightly crispy, about 5-7 minutes. Remove from skillet and set aside.

Add sesame oil to the same skillet and heat until shimmering, about 1 minute. Add the diced onion and sauté until softened and translucent, about 5 minutes. Reduce the heat to medium, add the cooked rice and frozen peas and carrots. Cook, stirring frequently, until heated through, about 5 minutes. Push the rice mixture to the sides of the skillet, creating a well in the center.

Pour the beaten eggs into the center of the skillet. Cook, stirring gently, until the eggs begin to set and form soft curds, about 3-4 minutes. Stir half of the cooked Spam into the scrambled eggs, then incorporate the egg and Spam mixture into the rice. Add soy sauce and Sriracha. Stir well to combine all ingredients, then remove from heat.

In a separate skillet, crack the remaining 4 eggs over medium heat. Cook until the outer edges of the whites become opaque, about 1 minute. Cover the skillet, reduce the heat to low, and cook until the egg whites are completely set and the yolks are still runny, about 4 minutes. Season with salt and pepper to taste.

Divide the fried rice among serving bowls. Top each portion with a fried egg and the remaining Spam. Garnish with shredded nori, sliced scallions, sesame seeds, and black sesame seeds. Serve immediately.

For best results, use day-old rice, as it tends to be drier and fries up better. If using fresh rice, spread it out on a baking sheet and let it air dry for about 30 minutes before cooking.
Feel free to customize the vegetables in this dish to your liking. Diced bell peppers, corn, or bean sprouts would all be delicious additions.
Adjust the amount of Sriracha to suit your spice preference. A drizzle of chili oil would also add a nice kick.
If you prefer your fried eggs fully cooked, simply cook them for a longer period.
