Incorporate the Greek seasoning, paprika, minced garlic, and chicken broth into the pot, ensuring even distribution over the pork. Secure the lid, ensuring it's properly locked. Select the Manual setting and set the timer for 35 minutes. Allow about 10 minutes for the pressure to build within the pot.

Employ the quick-release method to carefully release the pressure, adhering to the manufacturer's guidelines, which should take around 5 minutes. Once the pressure is fully released, unlock and remove the lid with caution.

Heat the olive oil in a large skillet set over medium-high heat. Using a slotted spoon, transfer the cooked pork from the Instant Pot to the skillet. Cook, stirring occasionally, for approximately 5 minutes, or until the majority of the liquid has evaporated and the pork achieves a desirable crispness.

For extra flavor, marinate the pork with the Greek seasoning and garlic for at least 30 minutes before cooking.
Don't overcrowd the skillet when crisping the pork; work in batches if necessary to ensure even browning.
For a richer flavor, use bone broth instead of chicken broth.
If you don't have Greek seasoning, you can make your own blend with oregano, thyme, rosemary, marjoram, garlic powder, onion powder, salt, and pepper.
