Follow The Directions

01

Step

**Prepare the Rice (20-25 minutes + chilling):** In a saucepan, bring the jasmine rice and water to a boil over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender and all the liquid has been absorbed. Once cooked, spread the rice evenly in a shallow dish and refrigerate until completely cold. Alternatively, use 1 1/2 cups of leftover cooked rice.

02

Step

**Sauté Aromatics (3-5 minutes):** Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir-fry for a few seconds until fragrant, being careful not to burn it. Add the chopped carrot and onion and continue cooking until the onion begins to soften.

03

Step

**Combine and Season (5-7 minutes):** Add the cold rice to the wok and stir-fry until heated through. Pour in the soy sauce and soy seasoning. Add the chopped green onions, cashews, raisins, sugar, and white pepper. Stir-fry until all ingredients are well combined and heated.

04

Step

**Add Lychees and Serve (1-2 minutes):** Gently stir in the quartered lychees just before serving to maintain their texture and flavor. Serve immediately and enjoy the symphony of sweet and savory flavors!

For an extra layer of flavor, consider adding a dash of sesame oil during the final stir-fry. If you can't find Maggi seasoning, you can substitute with a mixture of soy sauce and a small amount of Worcestershire sauce. Feel free to adjust the amount of sugar and white pepper to suit your taste preferences. Fresh lychees can be used when in season for an even more vibrant flavor.

Easy to follow and the result is restaurant-quality. I've made it several times already.

The Maggi sauce really makes a difference. I experimented with different soy sauces, but nothing quite compares to that unique umami flavor.
