A delightful dance of savory and tangy, this dip is an irresistible symphony of textures and flavors. Slowly caramelized onions form the rich, sweet base, punctuated by the bright crunch of cornichons and the herbaceous freshness of dill. Creamy, cool, and utterly addictive, it's the ideal companion for ridged potato chips or your favorite crunchy vessel.

Follow The Directions

01

Step
1 mins

In a large skillet, heat olive oil over medium-low heat until shimmering. Add the chopped sweet onion and sauté, stirring occasionally, until softened, deeply golden, and caramelized, about 15-18 minutes. Remove from heat and allow to cool completely.

02

Step
25 mins

In a medium bowl, gently combine Greek yogurt, Japanese mayonnaise, finely chopped cornichons, minced fresh dill, and minced garlic. Season to taste with salt and freshly ground black pepper.

03

Step
5 mins

Once the caramelized onions have cooled, gently fold them into the yogurt mixture until evenly distributed.

04

Step
2 mins

Serve immediately, or chill for later. This dip is best enjoyed with ridge-cut potato chips or pretzels for dipping.

For an even richer flavor, use brown butter instead of olive oil to caramelize the onions.
If you don't have cornichons, substitute with other finely chopped pickles, such as dill or sweet gherkins.
The dip can be made up to 24 hours in advance. Store covered in the refrigerator.
