Puree the prepared pears in a food processor or blender until completely smooth. (5 minutes)
Measure 3 cups of the pear puree into a heavy-bottomed saucepan. Add the sugar. Cook over medium heat, stirring occasionally to prevent sticking, until the mixture begins to bubble gently. (15 minutes)
Stir in the ground cinnamon, ensuring it is evenly distributed. Continue to cook, stirring frequently, until the pear butter thickens to your desired consistency. This may take another 15-20 minutes, depending on the pears' water content. The butter is ready when a spoonful placed on a chilled plate holds its shape.
Prepare a 1-pint jar by immersing it in simmering water for 5 minutes to sterilize. Wash the lid and ring with warm soapy water. Carefully remove the hot jar and place it on a clean towel.
